            Low Cal Double Chocolate Gluten Free Muffins. I made these last night because I had a banana sitting on the counter that was about to go bad and needed something to use it for! They turned out incredibly Moist and taste Awesome!☺️🍪❤️

😍 Low calorie choc heaven: 124 KCAL each
⠀
⠀
INGREDIENTS
Makes 10
1/2 cup oat flour
1/3 cup coconut flour 
1/4 cup cocoa powder
2 eggs
2 egg whites
1/2 cup plain Greek yogurt 
1 medium banana
2 Tbsp honey
1 tsp baking soda 
2 tsp stevia
3 tbsp mini choc chips
⠀
⠀
PREPARATION 
1. Preheat oven to 350F
2. Mix all of the dry ingredients together. 
3. In a food processor | by hand mix the dry ingredients (except choc chips) with the wet ingredients until incorporate. 
4. Stir in 2 tbsp of the choc chips. 
5. Spray muffin tin with oil and fill wells 3/4 of the way. I used muffin liners but the muffins stuck to them. I would just put them right in the muffin tin, make sure you use cooking spray. Top with remaining choc chips. 
6. Bake for 20 minutes. Enjoy!🍪❤️

❗️The oat flour, yes. The coconut flour is more effort to swap
❓I don’t like bananas, what can I swap the banana for?
❗️I would try swapping it for butter or egg.

🍝Quick classic meal for dinner! Which was needed after doing the weekly shop (should have done it at the weekend🤦‍♀️). To make this I fried 5% fat mince in @frylighthq. Once cooked I added a tin of chopped tomatoes, a tub of passata and a @jdseasonings bolognese pot which makes it super flavoursome! I also use this for when I make my lasagne too. .
🧀Garlic bread was made with @scharglutenfreeuk ciabatta roll. I halved the roll, spread on some garlic paste and topped with cheese and mixed herbs. Then under the grill for 5 minutes. As seen on this babes insta - @beingbrittany. I decided to top mine with parmesan cheese (30g as hexa) just cause it was convenient but you can use any cheese really. ----------------------------------------------------------------------------

Didn’t worry about eating healthy or exercising once which is so different from when I first started trying to eat better in college. 
The thing is, prioritizing your health is definitely super important. Eating well, getting 8 hours of sleep, exercising, practicing yoga, getting your greens in- definitely all stuff that makes your body run better. 
But you also have to worry about your happiness. This weekend- we stayed up way too late talking/laughing then got up early to travel. We ate way too much popcorn, had a little too much wine, and ate pizza after the game. Not gf, veggie pizza but just real normal pizza. Sure I could’ve gone to bed earlier but I would’ve missed out on making memories and the same goes for passing on a slice of pizza while we’re all playing games and hanging out. 
It’s so tough finding the balance of wanting to be healthy because it feels good, but not restricting and letting it get in the way of living life. 
For anyone struggling to find that balance, no matter what side of it you’re struggling with, just remember that a lot of people struggle out there too. It’s easy to say “enjoy the pizza and forget about it” because let’s be real, we wouldn’t feel our best doing that every day. Above all else, be kind to yourself, treat yourself like you would a loved one, and remember one day or weekend of eating differently doesn’t really matter in the long run ❤️
