I woke up this morning craving some “mum food”, and Shalgam was the first thing I thought of, before I even had breakfast. 12 hours later, I write this post, appetite satiated, with my lips still singing, my nose still sniffling, and my mouth filled with the heat from the wonderous spices from the curry 🔥 . It’s Canadian Thanksgiving 🍁 over here and even though we are in Palm Springs, we’re still celebrating all things potatoes, corn, stuffing, brussel sprouts, homemade buns, pumpkiny desserts and everything else sweet and delicious- Now as a nutrition specialist a lot of the time I’m asked by my clients how to “ prepare” for this kind of day ( or any festive day for that matter) and my answer is pretty simple…don’t worry about it. . Now that the weather is getting cooler I’m craving all things warm, cozy and soft. I’m a lover of winter which is why I typically find myself making stews & curries ( sorry I’m not the biggest soup fan 🤷‍♀️) and it dawned on me today as I was trying to think of freezer friendly foods that I haven’t made my “Healthier Butter Chicken” in ages! . If you're like me, sometimes you're so tired, come the weekend that the thought of going out with friends or even making dinner at home feels......exhausting. Or maybe it's just because I'm feeling extra pregnant today 😂🤷‍♀️ . SO when I'm feeling that unmotivated I like to make my meals even more simple. Take this salad for example, sure it looks boring but it really isn't. The dressing is homemade ( recipe on my website), the chicken was quickly breaded with gf crumbs tossed in my favorite spices and baked in the oven and the croutons were cut up (frozen) pieces of sourdough bread cooked with dried herbs & ghee. I'd say it took me maybe 15 minutes of actual "work" & saved me money on takeout ( that never really tastes that goof anyways). .
