Un mardi comme ils se ressemblent tous depuis 3 semaines ... La prof de ma fille absente, alors je l’ai avec moi ! On passe notre journée à rire, à se balader, à faire des trucs de filles quoi 😊. Je me rends compte de la chance que j’ai de pouvoir être là dans ce genre de situation pour profiter d’elle et j’espère de son côté qu’elle se rendra compte de la chance qu’elle aura eu d’avoir une maman disponible ! 😅. Chocolate Banoffee Pie . *video in highlights . Ingredients: 250g dark chocolate digestive 65g unsalted butter 1tbsp golden sugar 150g dark chocolate 120ml single cream or creme fraiche 2-3 bananas 300ml double cream 400g tin of condensed milk caramel . Method: 1. Crush the biscuits with blender or a rolling pin. 2. Melt butter and combine with the biscuits. And smith out in a spring form cake tin. Place into fridge for at least 2 hours. 3. In a pan melt chocolate, golden syrup, single cream, caramel and whisk to combine. Set aside until completely cool. 4. Pour mixture on top of biscuits and smooth out. 5. Whip cream and smooth over top. 6. Veggie Packed Prawn Thai Green Curry. . *video in highlights . . Ingredients: 400g King Prawns 2 Kaffir Lime Leaves 1 Lemongrass Stalk 2-3 Cloves of Garlic 1 tsp ground coriander 1 medium red chilli Baby Corn Green Beans 2 Peppers Fresh Coriander 25g Thai green curry paste Tin coconut cream Jasmine Rice . Method: 1. Prep and wash veg then part boil baby corn and green beans. 2. Chop garlic and chilli (deseeded) and peppers and add (only use half the chilli) to pan or wok with a good glug of oil and ground coriander. 2. Once garlic and peppers start to soften add curry paste and stir well. 3. Drain veg and place rice onto boil. 4. Add veg into pan with prawns, lemongrass and kaffir lime leaves. Coat in the paste then add coconut cream. 5. Add fresh coriander and reduce the heat for 5-10 minutes to thicken sauce. Remove lemongrass and kaffir lime leaves prior to serving. 6. Ingredients: 700g steak 300g mushrooms 2 peppers 1tbsp oregano 2tsp garlic granules 30g plain flour 1tbsp paprika 125ml beef stock 125ml white wine 125ml sour cream 2tbsp tomato purée Parsley . Method: 1. Slice veg and place in a bowl with oregano, garlic, salt and pepper. Set to one side. 2. Put flour paprika salt and pepper into a bowl and combine. Thinly slice beef and coat in flour mix. Set to one side. 3. Cook the veg in a little oil in batches, draining on kitchen roll and returning to the bowl. Repeat with the beef. 4. Melt a knob of butter and add in left over paprika flour to make roux. Add beef stock and whisk, white wine, tomato purée and then sour cream until you have a thick sauce. 5. Ingredients 12 chipolata sausages 500g potatoes (peeled) Green beans Baby carrots Splash milk Knob of butter Beef gravy For Dumplings: 100g Plain Flour 1tbsp baking powder 1tsp salt 15g soften butter 100ml milk . Method: 1. Place potatoes onto boil and sausages onto grill. 2. Place dry dumpling ingredients into a bowl and cut the butter up into squares. With your hands crumble these together. 3. Add the milk then combine into a dough. Seperate evenly into 6-8 dumplings. 4. Place these in a pan of boiling water and put a lid on for 15 minutes (do not lift the lid at any point of cooking). 5. Put veg onto boil. And turn sausages. 6. Drain the potatoes and return to the pan mash with a potato ricer and splash of milk. Can’t believe my eldest is 5!! She asked for a horse cake so I thought this was the easiest design I could make. . Cupcake mix (I had to double this recipe to make enough cupcakes for the horse) . This will also make 2x 8 inch cake tins and is my fullproof cake recipe. . Ingredients: 6oz self raising flour 6oz caster sugar 6oz unsalted butter 3 eggs 50g coco 1tbsp warm water. . Method: . 1. Preheat oven to Gas mark 6. 2. Cream together butter and sugar. 3. Add eggs one at a time and the water. 4. Sift flour and coco. 5. Fold in the mixture. 6. Divide evenly between cupcake cases (or cake tins). 7. Bake for 20-25 mins until knife comes out clean. 8. I then used basic butter cream with equal butter to icing sugar quantities. Ingredients: Ready made mash potatoes 1 pack bacon lardons Fresh chopped parsley Tsp salt Tsp pepper Tsp garlic powder 1 beaten egg Plain flour Breadcrumbs . Method 1. Fry bacon lardons and drain to one side, leave to cool. 2. Mix mash, parsley, salt, pepper and garlic together in a bowl. 3. Add in the bacon and mix well. 4. Place in fridge for 30 minutes. 5. Place flour, egg and breadcrumbs in 3 separate bowls. 6. Form mash mix into sausage croquette shapes then roll each in flour then egg then breadcrumbs. 7. Ingredients: Chicken Thighs or Breast 750g mozzarella 1 pack of Prosciutto Mash potatoes Green Beans 1 tbsp garlic powder 2 tbsp butter 1tbsp plain flour 100ml milk Handful of chopped Mint or chives 100g grated cheese . . Ingredients: 750g of leftover Roast ham or 2 x gammon steaks 2 large baking potatoes Carrots and Broccoli (or any leftover veg) 45g butter 45g plain flour 200ml milk 90g grated cheese (plus extra for the top). . Method: 1. Peel and finely slice potatoes, boil them and the gammon steaks for 30minutes. If you’re using leftover ham dice it up and place into oven dish. Add chopped veg and part boil. 2. Place ham and veg into an oven dish. Set potatoes to one side. 3. Melt butter in a pan and add the flour to make a roux. Pour in milk a little bit at a time until thick. Add cheese a little at a time to create a cheese sauce. 4. Pour half the sauce over the gammon and veg and coat. 5. Place the potatoes on top in slices until it’s covered. Meringue Ice Cream Slice . . *Video in highlights . Ingredients: 100g Raspberries 100g Blueberries 150g Caster sugar 2 Tbsp water 3 Tbsp elderflower cordial 300ml Double Cream 100g Icing Sugar 50g ready made meringues 4 large eggs 8-10 Strawberries . . Method: 1. Line a loaf tin with baking paper. 2. Place Raspberries, blueberries, caster sugar and water into a pan and simmer gently until sugar is dissolved and then set aside in a jug to cool. 3. Separate eggs into two bowls and whisk egg whites until stiff set to one side. 4. Whisk egg yolks and icing sugar until thick and creamy set to the side. 5. Whisk double cream and elderflower in a third bowl until stiff and and fold in half of the meringues. Then gently fold in the egg yolks followed by the egg whites until combined. 6. Spoon the mixture into the loaf tin covering the bottom and place into the freezer for 20 minutes. Place remaining cream mix into the fridge. 7. Pour some of the berry mixture on top followed by more of the cream and return to the freezer for a further 20-30 minutes. 8. Repeat until loaf tin is full and leave over night. 9. Overindulgent Chocolate Sweetie Cake . . Ingredients: . For the cake - 6oz Self raising flour 6oz caster sugar 3 eggs 1 tablespoon cocoa 6oz unsalted butter . . For the buttercream: 6oz icing sugar 6oz unsalted butter 1 tbsp cocoa Splash of warm water . To decorate: 2 packets of @kitkat 2 sharing bags of @mmschocolate . . Method: 1. Preheat the oven to Gas mark 6. Using butter, grease 2 8 inch cake tins. 2. Cream together butter and sugar 3. Beat in eggs 4. Sift flour and cocoa and fold in 5. Spread evenly between cake tins. 6. Place into oven for 20-25 mins - until skewer comes out clean. 7. Place on wire rack to cool. 8. Mix butter and icing sugar, cocoa and water together to make icing. 9. Spread icing all over the cake including the sides. 10. Break Kitkat in half and stick round the edge of the cake. 11. Pour the M&Ms onto the top. 12. Homemade Naan Bread. . * Recipe video in my Highlights Makes 3 breads . . Ingredients: 60ml warm water 1 tbsp sugar 1/2 tbsp yeast 250g plain flour 1/2 tsp baking powder 1/2 tsp bicarbonate of soda 1/2 tbsp salt 130ml natural yogurt 130ml milk Oil for frying . . Method: 1. Place water, sugar and yeast in a measuring jug mix and leave to rise for 10 minutes. 2. In a bowl put flour, bicarbonate of soda, baking powder and salt and mix. 3. Add yogurt and milk to the yeast mixture and stir to combine. 4. Make a well in the dry ingredients and pour in the wet. 5. Combine the mixture with a spatula until a dough is formed. 6. Tip the dough onto a floured surface and knead. 7. Place the dough back into the bowl and cover with clingfilm. Leave for at least 2 hours to rise. 8. Tip back out onto the floured surface and roll into a ball. Cut into 3 equal pieces. (I cut one piece in half again to make smaller breads for my children.) 9. Roll each piece into a ball and using a rolling pin covered in flour roll out flat. 10. Put a good amount of oil into a frying pan and let it get very hot. 11. Place the flat dough into the pan and let it sizzle for a few minutes until bubbles appear then flip and cook for a further few minutes on the other side. 12. Homemade Cullen Skink (Scottish Smoked Haddock Soup) 🏴󠁧󠁢󠁳󠁣󠁴󠁿 . . Ingredients: 380g Smoked Haddock 250ml milk 250ml vegetable stock 1 x Onion 10 baby potatoes Chives 4 eggs . . Method: 1. Cook onion in a table spoon of butter. 2. Place smoked haddock into the milk and cook for 4 minutes, remove haddock set to the side (save milk). 3. Add potatoes to onion with veg stock and simmer for 15-20 mins. 4. Add milk and use a hand blender to make smooth. 5. Put eggs on to boil for 4 minutes. 6. Flake the fish and remove bones add to the smooth broth. 7. Cut chives and add. 8. Take shell off egg and cut in half. 9. Serve up the soup and add your egg to the top. . . * If you have small toddlers/babies.
